Fryer Feature: SAUSAGE AND STRUDEL

It’s a highlight of every new year, gathering in Moulton, Texas, at the home of Junior and Helen Chaloupka… extended family and friends sharing the work of making strudel in the kitchen and sausage in the tent facilities outside.

We span generations. This is the bedrock of Lavaca County community… folks helping each other… with a lot of experience and knowledge. The big guy on the extruder is a PhD, animal research scientist at Texas A&M, his young son and daughters were lending a hand. The man in charge of the smokers is an MD anesthesiologist. He’s very precise on time, temperature, quality of smoke. Entrepreneurs and connoisseurs. What an experience to sample each other’s pan batch… and then discuss flavor, consistency, after burn as in a fancy wine competition. That might be my favorite part of all.
