I don’t know about other states, but in Texas we rate cafes by the excellence, or not, of their chicken-fried steaks. Truth be told, I’m not sure I’ve ever met a chicken-fried steak that I didn’t like, but there are all manner of criteria for judgement; thickness, tenderness, breading, fry oil, just to name a few.
Why I think of it on a busy news day? It was the Facebook live stream on Houston’s Morning News.
