FRYER FEATURE: CHICKEN FRIED STEAK

I don’t know about other states, but in Texas we rate cafes by the excellence, or not, of their chicken-fried steaks. Truth be told, I’m not sure I’ve ever met a chicken-fried steak that I didn’t like, but there are all manner of criteria for judgement; thickness, tenderness, breading, fry oil, just to name a few.

Why I think of it on a busy news day? It was the Facebook live stream on Houston’s Morning News.

“Dallas” (that’s her name) watching us from outside San Antonio and telling me about the new cafe she’s opened in the Frio Canyon.I queried whether she had CFS in her cafe, and the answer was, “the best!” That opened a whole string of suggestions for CFS locations, and fried catfish and biscuits and gravy, which now opens the question; Is it CFS without gravy?
